Vietnam is the world's biggest Robusta producer, and its specialty scene handles Arabica and Robusta with equal fluency. Beyond the traditional dark roasts brewed through a phin and mixed with condensed milk, a growing wave of specialty shops and roasters is putting Robusta forward. Some friends say [it tastes like] blueberries.” She concedes the roast may come across as slightly baked, or that it might have stalled in the final moments in the drum. “But when you de-gas [the coffee] and keep it for a few weeks, it’s very floral and very interesting.”",[16,88,89,90,92],{},"Sahra Nguyen, founder of Nguyen Coffee Supply, has done a great deal to challenge assumptions about Robusta in the US, and she too favors a measured pace. “In general, I take a low and slow approach to our robusta compared to our arabica,” Nguyen writes in an email. I roasted the lot two ways: one gentler, with a lower charge temperature; the other with a higher charge and more aggressive heat throughout. These approaches roughly echoed how I treat softer Arabicas such as natural Brazils and denser coffees such as washed Colombias. I asked him by email about what I had found. He agrees that a sharp grain note would suggest under-roasting, and he identifies it as a risk in lighter-roasted Robustas. Elsewhere he notes that a longer, gentler profile benefits Robusta's “sweetness and mouthfeel,” yet he warns against too light a touch. His reasoning resembles Venturim's. “I think from my experience with roasting robustas…is that they don’t seem to transfer heat to the inside of beans as easily as arabica,” Meza cautions.",[16,136,137],{},"“So it is very easy to under roast them, to have a relatively high finish temperature, but the inside of the seed and the ground color is much lighter than you would expect from Arabica at that temperature. So, the graininess is from under development. Tasting an under-roasted bean was instructive, but I am nowhere near understanding this species. The handful of roasters I have spoken with share the time-tested view that Robusta generally responds well to low heat and longer roasts. Apply the heat too gently, though, and you risk underdeveloping it, especially when aiming for a lighter roast. One likely explanation for this quirk, among other factors, is Robusta's unusual anatomy: less dense than Arabica because it grows at lower elevations, yet absorbing heat more like a dense coffee.",[16,142,143],{},"Countless roasters have spent years dissecting the finer stylistic details of an Arabica roast.
